|Step 1: Carefully scrape white fiber from inside of the orange peel.|
|Step 2: Place pieces of orange skins loosely into small processor.|
|Step 3: Process in short bursts until finely chopped|
|Step 4: Check often until peels are of uniform size.|
|Step 5: Spread loosely in one layer on plastic plate.
Allow to dry, fluffing often to dry completely.
|Step 6: Store in airtight container. Use in recipes callng for zest.|
